Sweet Potato Casserole

3 c. cooked sweet potatoes
1 c. sugar
1/2 tsp. salt
2 eggs
1 stick butter (softened)
1/2 c. milk
1/2 tsp. vanilla

Combine above ingredients and put into a large Pyrex baking dish.

Topping:
1 c. dark brown sugar
1 c. chopped pecans
1 c. coconut (sorry Stacey...)
1/2 c. flour
1/3 c. oleo

Mix topping ingredients together and pour over filling. Bake at 350 for 35 minutes. AWESOME!!

That's okay... putting coconut on food around me just ensures there's more for you. :) Same with raisins.

Yes, always more for me! I love coconut and I love sweet taters. Yummmy! Just WHY do you think I always use coconut on specific dishes?
